Indonesian Pancakes ‚Serabi Kinca‘

Serabi Kinca

Hi guys... l am back. This time, l will show you how to make 'serabi kinca‘ (traditional Indonesian pancakes). It's from Bandung, West Java. I lived in Bandung for about 5 months where l spent time undertaking a German course.

Remember when l made these pancakes l got many positives reactions from my friends. So that I won't forget the recipe l will put them in my blog.

Let’s check it out!

For the dough;

150 gr flour

50 gr rice flour

250 ml of coconut milk

1 tsp pandan paste

1 egg

3 tbsp of sugar

1/2 tsp of backing powder

1/2 tsp of dry yeast

1/2 tsp of salt

Mix the pandan paste with coconut milk. Then put all the ingredients together. Mix them well.

Cover the mixture and let it rest for 30 minutes at room temperature.

Now fry it in a hot pan without any oil in the shape of little pancakes for about 5cm diameter. Don’t turn them over but just brown them from one side, keeping the other side nice and green.

For the sauce;

ca. 80 gr of gula merah (brown sugar)

(It looks dark brown, see the video below)

btw, if you don’t have it, you can use normal sugar

2 Pandan leaves

250 ml of cononut milk

Pinch of salt

1 tsp of tapioka

(tip; you should make the tapioca fluid by putting it in a glass with a little bit of water before you put it together with other ingredients)

Put all the sauce ingredients together in a pot. Cook with  low heat. Stir them up. When it is cooked, turn off the stove. Done!

I didn't find the sugar that I used in any of the shops in Germany. Alternatively, you can use coconut sugars. They are available in supermarkets in your towns, I think. For some ingredients, I also put them in the links below, if you don't want to go to the Asian shop :))))

Have fun guys!

Xoxo, Rita
